We used to have a flour mill with a very similar board. We sometimes were forgetful to update it and never paid much heed to it until an incident occurred. We did reset it that day - brought to our attention how much the 0 days mattered.

I am Kaushik from Spike.sh. We built https://incidents.sh, a "days since last incident timer" for dev teams to keep track of when the last major incident occurred.
You just select the date of the last major incident and the timer will update everyday. Whenever there is a major incident, you can reset the timer which will take it back to 0 days. You can show the timer to others by sharing a public link.
Previously, we used a whiteboard (before going remote) for this and as you can imagine, it got quite tedious to update it everyday.
Our small remote team found this helpful and I hope you will too.
